A supplier quotes equipment against a specification sheet. The specification sheet assumes a supply that is stable, balanced and not already carrying half a building.
Actual load at the board, phase balance across the run, and headroom at the times the kitchen is busiest rather than the times it is convenient to test.


Equipment run at the edge of its supply does not break immediately. It runs hot, draws more, and shortens its own life quietly, until a component fails and the warranty conversation begins.
Upgrading a supply during a fit-out is a line on a quote. Upgrading it afterwards means closing the kitchen.
