Most kitchen fires that spread beyond the kitchen spread through the duct. The canopy gets cleaned because you can see it. The run above it does not, because you cannot.
Access panels are the difference between a duct that can be cleaned and a duct that can only be replaced. They cost very little at installation and a great deal afterwards.

Every clean is photographed at the same points: canopy, filter bank, first bend, and each access panel along the run. The photographs are dated and kept, so the interval can be argued with evidence rather than opinion.
